Healthy Banana Bread

About the Recipe

This is a very versatile recipe. You can add or switch to your favorite sugar or sugar substitute, along with the milk, and egg. Applesauce is used in place of oil. Feel free to add to it. Chocolate chips is da bomb to a banana bread. This recipe also works well with blueberries! Add 1 cup of fresh/frozen blueberries for a blueberry banana bread.

Ingredients

  • 1 cup of Splenda or your favorite sugar substitute

  • 1/2 cup of unsweetened natural applesauce

  • 2 eggs or egg white equivalents

  • 3 large ripe bananas - mashed well

  • 1/2 cup fat free milk or milk substitute

  • 1 tsp vanilla

  • 3/4 cup of instant oatmeal flakes

  • 1/4 -1/2 cup of whole wheat flour (based on consistency)

  • 1 tsp of baking soda and salt

  • Splenda brown sugar for topping if desired

Preparation

Step 1


Heat oven to 350 and prepare 1 loaf pan 9 x 5 or 3 mini loaf pans. Spray cooking spray on bottom and sides. .



Step 2


Mix all wet ingredients together, stirring well. Then begin to mix in dry ingredients. Check consistency. If too thick (wheat flour can dry and thicken the batter) add your liquid of choice (applesauce or milk). Poor in pan.



Step 3


Spread brown sugar on top of loaf/s to desired amount. Place in oven and bake for approximately 50 minutes to 1 hour. Check periodically by inserting toothpick. When toothpick comes out clean, bread is done.



Step 4


Allow 10 minutes to cool. Warm bread should fall apart. The cooler the loaf, the more it sets.
